I was waiting for Gina to leave to make this dish..mainly because she would HATE it!

I LOVED IT. 
Chicken-Coconut-Pineapple Curry with rice. 
(More like garnished with Pineapple..and Feta.) 
What made this so delicious was the creamy-ness of the coconut milk and how weirdly yummy it tasted mixed with crushed tomato sauce.

GINA IS HERE IN SWEDEN!
My best friend arrived on St. Patricks day! We’ve had a fun filled, jam packed two days…full of touring around Uppsala and meeting everyone I know here! We’ve eaten at my brunch and saw 3 nations so far! We even went to a Flogsta party! 
We plan on going to Stockholm and Gamla Uppsala! I can’t wait to spend quality time with her, seeing someone I love from home is so much more amazing than I even realized! 

I’m so happy!

I have been so caught up in my life here, I forget that this is a temporary experience that I have to document. 

I have been really preoccupied with my helgfikavärd position. I run the weekend brunch at my nation Snerikes with 3 other Americans. We staff, order the food, pre-cook and then cook on the day as well as handle the profits. We even created the menu and strategized how to make it all work. We’ve had about 7 brunches so far, and we’re really getting the hang of it! We call it our “Cali-fresh” brunch! I am responsible for so much, I really proved to myself how much I can handle, i’m pretty impressed with myself. 

I also spend most of my time working as a waitress at Snerikes, that pink castle really swallows all of my time. I call it a time warp from the Twilight Zone because my time evaporates and I feel like i’m going to be there forever. 

School is going pretty well also! I barely have homework and I love all my classmates, we’ve really become a close knit group. Its so nice walking into class every morning and seeing all my friends. The subjects are usually interesting too which is relieving because before I got here the description of the courses really intimidated me!

I sincerely LOVE the people I have met here now, I really feel like I made a place of my own. I do not know how I am going to say goodbye to Uppsala and the friends I’ve made here. I never want this experience to end, and as much as I miss and love my family and friends, nothing compares to Uppsala…

I WON THE HELGFIKA POSITION!

Meaning I am officially an Official at my nation! Sodermanland-Nerikes nation! I run the saturday brunch with 3 other Americans who coincidentally all go to SFSU!

Because of this I get a few benefits, one of which was to go on “Kongress”! It was a retreat to the land of Sodermanlands for team building and to bond! It was so fun! We had a “Under the Sea” themed party, team building activities during the day and then a  formal dinner the next night! 

Snerikes has really become a home away from home for me…especially because I’m there more than I am at my actual home here. I love that magical pink castle for some strange reason. 

Our days in STOCKHOLM and UPPSALA!

We went to the royal palace and saw the royal jewels as well as the royal apartments! Ate taco bar, roamed around the city! We ate Swedish Meatballs and the Culture house! We went to Town Hall and explored!

Our day trip to Uppsala was jammed packed, I showed them everything!!! We then saw “The Girl With the Dragon Tattoo” and I had to depart from my daddy and brother at the train station :/

It was an amazing trip in amazing places with the most amazing people, So so so lucky.

We saw a cheese factory, a shoe factory a fish market, the original Dutch Windmills! We saw a spice factory and ate fish and chips! So beautiful!

MY time in Amsterdam with Daddy and Allan!

We spent a good amount of time there! Stayed in our family’s home! So fun! 

We went to the Heineken Museum, the Anne Frank Museum! WE saw the red light district, went to the zoo (so amazing!) We saw a world renown circus and spent quality time together while exploring this amazing city! We walked into the Jewish Museum, went to the movies together on Christmas we really did almost everything we wanted to!

OUR TIME IN STRATFORD UPON AVON!

We spent a few days in this wonderful town! 

It was so quaint and beautiful!

We hung out and went to dinner! Roamed around and saw the outside of William Shakespeare’s mom’s cottage and his wife’s house! We also went to see his birthplace and grave! We walked by his daughter’s house and saw the site where he built a house and lived after his success! 

We saw the play “Robin Hood” and the Royal Shakespeare Theatre!

So awesome!
